Welcome to Ruchkar Mejwani with Smita. Today I am going to show you a delicious ‘Kantola Bhaji’. (Spiny Gourd Vegetable) ‘Kantola’ is generally available in monsoon and is extremely healthy. Let’s see how to make this vegetable. Let’s heat some oil about 3-4 tbsp. Once the oil heats I am going to fry finely chopped onions in it. I have finely chopped 3 onions here. I am going to stir fry them. We have to fry these onions until they turn pink. Let’s chop kantola until the onions turn pink. I have already chopped a few of them. I have cut them into fine slices. Now, I am chopping the rest. Kantola generally looks like bitter gourd. But does not taste bitter like bitter gourd at all. It is amazing in taste and is nutritious as well. It has high amount of iron and proteins. So, one should eat this vegetable. The onion has turned pink. Let’s add green chilies in it. I have taken 5-6 green chilies. I have sliced them lengthwise and I am going to add them to this and stir fry them. Now, I am going to stir fry sliced kantola in it. Now, add 12 tsp turmeric, add salt and stir fry. Now, add a splash off water in it. Cover it with a lid and let it cook on low flame. Let’s stir the vegetable so that, it doesn’t stick to the base. Let’s cover it with a lid and let it cook for another 5 mins. And then our vegetable will be ready. The ‘Kantola’ is nicely cooked. Let’s squeeze half a lemon in it. Let’s add 12 freshly grated coconut in it. A cup full of coriander leaves. Finely chopped… Let’s add that as well. And, now let’s cover it with a lid and let it cook for 2 mins on steam. Our ‘Kantola Bhaji’ is ready! Let’s remove it in a serving bowl. You will get kantola bhaji in abundance as it is rainy season. So, definitely try this dish and let me know.
